I never know how to respond to the word "favorite." Does that mean the cuisines I get the most excited about, or the one I ear the most often?
If the former, Vietnamese, and if the latter, Indian.
Though I pretty much like every cuisine except Kazakh.
Bonus points for anything with a French influence.

It has a French influence.
It's like the best of every world. The spiciness and tradition of Asian food mixed with the very best of Western culinary traditions. And you get everything - grilled or steamed meats, carbs, a pile of raw fresh vegetables and herbs, some cooked veggies. You can go sweet or salty or sour or bitter.
It satisfies every possible craving you might have. Whatever your craving is, you can find something to meet it on a Vietnamese menu.

but though this usually comes with pickled veggies, I order the veggies that usually come with pho: fresh mint, fresh thai basil, lime, jalapenos, bean sprouts.
