I'm inclined to think it's going to come out in 2022--I think it would be awkward to push the "GTA V enhanced on ninth generation" release for 2021 and then have the flagship new title come out a few months later. Also Rockstar typically likes to have a decent amount of time to promote before release and it would be odd for GTA VI to be a 2021 title without us having heard a peep about it so far.
I have heard the other argument which is that Rockstar is going to use the GTA V Enhanced release, maybe around July, to build up excitement for a GTA VI 2021 holiday launch.
