Now, I think most survive by being "captive audience" restaurants. They're in airports, next to courthouses, inside Walmarts, etc.
They prey on people who are hungry and have limited options.
How do the freestanding ones in suburban shopping centers or busy downtowns survive? No idea.

Every few years when I’m sick I’ll grab a can of Chef Boyardee and have it with a slice or two of cheaper white Wonderbread on the side. And every time the experience pretty much ruins the memory. |
