ok. here's one: pan fried chicken breasts with roast tomatoes. you make it like this:
put some grape or cherry tomatoes in a bowl. toss them in olive oil, salt, and herbes de provence (italian season works ok too). put in oven at 400 degrees for 30-40 min. take out, put in a couple dashes of worchestire sauce. while the tomatoes are roasting, season with just salt and pepper then pan roast a couple chicken breasts. when done, put tomatoes on plate, put chicken breasts on top, scatter parsly and fresh tarragon (although the latter can be omitted) on top.
here's another staple in our house: simple pan fried fish with lemon caper sauce
pan fry some fish. put some olive oil in a pan, sautee some shallots, add some capers, then add some white wine (two buck chuck) and lemon juice. pour over fish. serve with mixed greens salad with balsamic or italian vinagrette.

another: pulled pork tacos
brine pork roast in molasses / salt over night. take out and cover in olive oil / cajun seasoning. stick in oven at 225 for 8-10 hours. pull apart with forks. mix some pork with some canned chipotles or salsa.
mix avocado, mayonaise, sour cream, cilantro and lime juice.
serve pork inside corn tortillas with avocado stuff on top. serve with some black beans.

molasses adds some depth to the brine over regular sugar. the cajun seasoning goes well with the pork and lets you use the meat for all kinds of different things. from the last one i did we've had pulled pork tacos, farfelle w/ pulled pork, feta, and parsly, bbq pulled pork sandwiches, and i still have some in my fridge that i'm not sure what i'll do with yet.
the heat and smokiness of the chipotle blends well with the pork seasoned that way, and then combines really well with the coolness and sour / citrus of the avocado / sour cream / mayonaise / lime juice topping. cilantro adds a bit of freshness.

another: chicken provencal
season chicken breasts with italian seasoning, then pan roast. in the mean time saute some mirepoix, then add white wine, then chicken stock, canned tomatoes, sliced black olives, a couple anchovies, and a can of white beans, a little basil (i've stopped buying fresh basil though). serve chicken on top, then top that with gremolata (garlic, parsly, lemon peel)

ok OP, i'll give you one:
last week i bought a 1 lbs. NY Strip. cooked it medium rare with salt and pepper only, cut it in half for me and gf. served with side caesar salad and rosemary roasted red potatoes. steak was not on sale, i think it was like $12.

Try to come up with recipes using similar ingredients and go from there... savings will be dramatic.
