2016-2021 are the best in that they’re the post-face lift 200 series cruisers. The pre-2016 are mechanically identical, but very slightly more dated looking. I still love them.
The 2018+ got interior LED lighting. And at approximately mid-year 2019 they updated the infotainment to be a more responsive and better screen, where the old ones were more like early-2000 Garmins. But it barely matters because they were all antiquated tech the day they rolled off the line.
Avoid the “Heritage Editions” because they ditched the third row seats (of marginal value) and the console refrigerator (of high value) and substituted some badging, a chintzy roof rack, and a pretty great looking set of bronze wheels.

This is not the credited response.
CR is the regular edition. Unbolt the third row, which is simple because it has no electronic components, and bolt it onto a plywood platform with some casters so it becomes a fun platform/couch in your garage or for the kids to play on in your basement.
Then you keep the cool box, which is 180^180 on long road trips.
And, to finish things off, you really want a set of ARB or TrekBoxx or similar drawers. Then the drawers and the second row when folded make a perfectly flat platform. Perfect for sleeping or hauling larger loads. If the third row seats are still in, then the cargo area is really not that functional. Even with the third row out the second row doesn’t fold out of the way very well unless you have drawers installed

As mentioned above, 200 series is the sensible answer. But if I was going for a pure fun car, I’d choose one of these:

I have an fj80 and fj100. Very similar interior and layout but with the fj100 they modernized some aspects and I think it changed the feel. The 80s still had the straight 6 and solid front axle. It feels more like a truck. It lacks power and brakes are underpowered but it's built to go anywhere anytime.
The 100 has the v8 and it can tow quite a bit more but that's not really what you're looking for in a cruiser. It's definitely more family friendly. 100s have a timing belt instead of the chain on the 80s. That bothers me.
If both were brand new id take the 80. I paid $3800 for my 80 used with factory lockers. I think they go for about $10k now. I paid $15k for the 100 and I think I'd get my money back pretty easily even though it's not nearly as pretty as when I bought it. Both are exceptional. I think the land cruiser all around is the finest mass production vehicle line ever made.
I also have a cj5. I didn't buy it. It's simple and obviously a tried and true design but it's not the same. I'd love to swap it for an fj40.

Alternator went out at about 260k. Valve cover gasket at about 250k. Maintenance is more frequent and expensive but I also drive it more. I think you make up for the higher front end costs with lower maintenance overall.
I get the sense the fj80 age scares you off. It's the last 'true' land cruiser for the hardcore ih8mud types. Honestly it's a little too 'fancy' as is for a bug out vehicle. I don't want power seats or windows even. But boy can it take abuse. Lol my wife drove it as the family wagon for years before we got a minivan. Resale value is just ridiculous now though.
Edit: fj100 is at about 280k. Drives great. Fj80 the odometer stopped about a decade ago at 267k. I've done nothing but maintenance to it. Two power window motors if I recall. That straight 6 has hit a million miles on some rigs.
