I like maximalist filmmaking, so I vibe with Eggers, even if I don't think any of his movies are flawless. This might be my favorite of his to date (I think the Lighthouse might be slightly stronger overall but I'd watch this again before I'd watch Lighthouse again).
Everything about this rocks; it reminds me somewhat of Mandy as being a fullblown heavy metal concept album of a movie.
Orlok is genuinely disturbing and disgusting and almost weirdly. . .believable; great design. Fucking dark and nasty guy.
Dafoe is kinda goofy shtick, but Van Helsing is sort of goofy in the source material, and in both cases he shows up at a point when you desperately need some sort of faith/hope/comic relief, and his presence really is soothing and reassuring.
Depp is great in this; wish we spent a little more time with her character, but she writhes sinuously like she's not even human.
Hoult is sort of bland, which again is sort of consistent with the source material, but he has good moments,
Does a good job paying homage to the original without being cutesy or fan-servicey. Could have used a little more time on the boat, which is the best part of the original.

Movie is too long, the photography and atmosphere is amazing, characters kinda suck. Slow moving, genuinely creepy at times. A little too stylized imo. Good movie in theatre if people are being quiet, it's a quiet dread movie like The Witch. One watch is enough. Eggers one of the few interesting directors working with a sizeable budget, think he's a little overrated for that reason.

It didn't; very few movies need to be 2.5 hours IMO. Even more true with horror movies which are at their best when they get in and get out quick.
The main addition--Lucy has a sexual/spiritual connection to Orlok--works much better than I thought it would. But at the same time it felt like it could have been developed more. Same with the boat voyage (as an aside, I know that the boat journey is because it's a ripoff of Dracula, which is set in London. But for Romania to Germany, wouldn't have made more sense--and been a FUCKTON cooler--if they'd did a train?).
It's absolutely worth seeing, though. It certainly has flaws, but it's a technical and artistic achievement, and actually scared/disturbed me a couple of times. A couple scenes are absolutely brutal.

Agreed that it's too long; you could probably make 15-20 minutes of trims without removing any scenes entirely.
Characters aren't great (except for Orlok), although that's not entirely his fault (Dracula is great on vibe, solid enough on plot, but pretty weak on character). Hoult in particular didn't do much for me, although he leans into the male rape subtext for his character in a way I haven't seen in other adaptations.
I like the stylization, but after a while it becomes a little deadening.
I generally agree with you--Eggers is sort of like Nolan in that he's one of the few directors with big budgets and distribution who is interested in artistry and exploration. I just hope he doesn't turn into a Tim Burton type and have it boil down to a formula.
