there have been an estimated 10,000 saints so, yeah, there's more than one for each day. 1700 in the last 500 years when we have better documentation.

Most saints' days are just memorials, they aren't feasts at all. In the pre-V2 calendar, only days ranked as a double or higher could be considered feasts in any real sense, and that's a much smaller number.
So a village who had a more minor saint as a patron, or had his or her relics, would probably have celebrated that feast as a double, but no neighboring village might.
