• Air of Provence – Lavender-infused oxygen captured at sunrise in southern France, released tableside for direct inhalation. $17

• Beet Tartare (Reimagined) – Hand-chopped raw heirloom beets, fermented for 41 days, plated on a reclaimed vinyl record. Served with antique silver tweezers. $26

• Bone Marrow Cortado – Roasted bone marrow poured into a demitasse, topped with oat milk foam, garnished with dehydrated shiitake dust. $22

MAINS

• Phantom Venison – A venison course without the venison: smoked lichen, spruce ash, and a narrated field recording of a deer walking through snow. $48

• Inverted Burger – Wagyu beef sliced thin to form the bun; patty of compressed golden beets and charred plum. Served with truffle ketchup in an eyedropper. $39

• Absentee Ramen – Cold buckwheat noodles, pickled pine shoots, quail yolk cured in kelp brine. No broth; broth vapor diffused intermittently at your table. $42

SIDES

• Pickled Unknowns – Five unlabelled fermented vegetables, chosen by the chef each evening. Served in test tubes. $14

• Charcoal Yam – Whole yam coated in edible charcoal, smashed at your table with a vintage croquet mallet. $18

DESSERTS

• Whiskey Balloon – Helium balloon filled with vaporized single malt; inhale until deflated. $28

• Birch Sap Granita – Hand-harvested birch sap, frozen and shaved by a staff member cycling a restored 1920s stationary bike. $21

• Single-Origin Ice Flight – Four artisanal ice cubes from different global water sources; paired with still or sparkling water. $19

• Cold Brew Negroni – 72-hour Ethiopian cold brew, Campari reduction, small-batch gin, stirred over volcanic basalt. $31

We will have 8 more beers on tap. No IPAs though. Too mainstream.
