It pisses me off when people say they don't know how to cook. I realize it takes some actual skill to invent butter-poached lobster or make a 7-layer fondant cake, but for fuck's sake, take some ground beef and put it on a hot surface instead of paying $9 plus tip to get it delivered.

Cr. After cooking for a while you pick up skills, you can get creative with ingredients and make things up to tailor it to your supplies and equipment and situation. Anyone can pick up these skills, they just take a little time, nobody just has them automatically.

But even without such skills, anyone can make some damn good eats with the help of marthastewart.com

I dunno. I'm a dood and I've tried making simple pancakes which have turned out crap, and other things which just didn't taste satisfying. I've tried but have no skill in that dept - I personally think cooking is a rather innate skill - you have to know proportions, how much spices, etc. to add - it's not as simple as just following box instructions which often turn out crap meals.

Sounds like you had crap instructions, didn't follow them, or they left open some matter of interpretation that you got wrong.

"I personally thinking [sic] cooking is a rather innate skill"

Sorry, you're just wrong. Being world class or getting good a bit quicker than others may involve some innate skill. But anyone can cook awesome food practically on their first try.

Nope. If you're talking about being able to cook without recipes and invent crazy new dishes, then yes, being Gordon Ramsay or Jean-Georges is in large part an innate skill. But if you can't sear tuna or make a pot of spaghetti, both of which involve nothing more than being able to set a timer and react when it goes off, then you're a full-on retard.

Let's see, if you didn't know the right proportions or how much spices to add, what might tell you? Perhaps something called "a recipe"? Alternatively, if you aren't retarded you can make a dish with whatever proportions, taste it, and add more of whatever you think it needs until you arrive at a tasty product (may take multiple attempts).

I agree. I never ever cooked before the start of this year (family ate out every meal growing up; I just got take-out or the cafeteria in college) and I made a new year's resolution to learn to cook this year. It's not that difficult - today for example I just grilled up some chicken breasts with a cool marinade that tastes as good as anything in a typical restaurant that's not high cuisine today. And I'm a 6 month noob at this.

My Dad was like this before he met my Mom (an amazing cook), and she found out it was because my Grandma made him shitty, overcooked, nasty veggies all his life. After my parents god married, my Mom convinced my Dad that if he'd try her way of making veggies just once she'd never ask him again if he didn't like it, and he liked it.

Preparation is key.

That's more than my mom. My mom doesn't know that you should marinade chicken or know how - she just adds 'chicken seasoning/flavoring' like vegeta on top of chicken and shoves it in the stove. She's stupid and it turns out gross. That's why I don't learn cooking from her.

That said, there's different levels of cooking - beginner level (like my mom in her whole life) is just cooking chicken without seasoning and adding frozen vegetables. IMO the addition of sauces/spices often makes it more advanced.

This was the same as my experience growing up too. I hate most red meat tho which makes trying to learn to cook more difficult. I was also on a low-carb thing at one time and never ate potatoes for years but think I'll just try making stuff I don't like for the hell of it, so I know how...what do u usually cook? I'd love to learn to cook vegetarian meals but it seems time consuming and expensive. I love veggies tho.

2 options

1: she tries overly complicated recipes

2: she doesn't cook what you like

My mom does both, so I know all about this. I can't eat the food she makes. But I have faith in her basic ability to boil an egg. Although, I bought some take'n bake bread to go with dinner and she baked the entire enormous loaf in the morning, thereby completely defeating the purpose of the take'n bake system. Also her scrambled eggs are runny on the inside and burnt on the outside. But seriously, it's not like she couldn't cook well if she really put in the effort and followed a recipe as directed. I think some people just don't pay attention or something.

Your mom chooses not to cook well. My mom does the same thing. She puts something on the stove and then walks away and shit and it burns. Or she chooses to get way too adventurous in making something up because she just wants to use the ingredients or something.

Follow some fucking simple as fuck instructions and you can cook great food. Maybe you have to learn like 6 or 7 cooking vocab words at most and those only appear in some recipes.

it's like fashion in that some people have a sense for it while others just don't - although a lot can be gained from experience (how different flavors go together) and watching the cooking channel (techniques)

pretty much anybody can follow a recipe though

and just through doing that, even if you don't have a natural sense for it, you'll still pick up a lot of basics and start to get an idea of what's going on.

getting better a timing meat cooking is definitely an acquired skill since a recipe can't really tell you precisely what to do (it's always different depending on heat source and meat thickness/size). and there are some difficult recipes out there (e.g., try having a noob make pad thai or something very timing and multitasking intensive), but there's no excuse for people that flat out don't cook because they "can't"

Think of stuff you like to eat. Google the name of that stuff along with the name of someone like Alton Brown, and you'll often find decent recipes (I am not, for the record, holding up Alton Brown as any sort of culinary icon, but his recipes are usually straightforward and pretty good). You'll start learning what you need to do to make good food, and then can start varying things or doing it without having to refer to the recipe.

The trick, in my experience, is not to blindly thumb through recipe books/sites looking for things you might like, but to start learning to make things you already do like.
