Middle school kid will blow deadlines, have zeros entered into gradebook, and then wheel & deal with teachers to accept late work.

It often works, but sometimes teachers can't be bothered and he eats the zero.

Ive gotten on his case but he keeps working this way. His argument is, "Don't judge me till the final grade, I will take care of business before the door slams shut."

I am tempted to punish / correct him now. Teach the importance of deadlines, etc. Of course, it doesnt help that the school doesnt seem to treat deadlines as actual deadlines, but with any eye towards his maturation, would you enforce "no zeroes at any time" as a household rule with reasonable consequences?

Or just let slide to let him try to work the system, and only punish a final result?

Assuming you are in a good school district, the teachers progressively tighten up on that stuff as the kids get older. Mine was 100% the same way in middle school but the 8th grade teachers started tightening up and the 9th grade teachers working in conjunction with this.

Middle school was when you had to get your parents to sign your agenda book every night.

I did this all the way through high school, mostly with math homework, I'd just turn in a blank sheet and take the zero, not sure what you're supposed to do about that unless you are going to check every single assignment your kid ever gets, seems better to let him either learn to manage it or suffer the consequences

you have to set the tone now. Though it is difficult if the school doesnt GAF. Maybe set a reward system. All homework in on time then unlimited TV/videogames/whatever on Saturday. Missed deadlines then no TV for a week.
