3 shallots aren't really gonna stand out with beef, they're too delicate. they are better used in a dish that highlights them as a standalone, so that you can actually taste them. that said, if you haven't used any other alliums in the dish like yellow onion or garlic, i'd still probably chop them up and add them to the dish. - one man's opinion
