the people i know who are at really good boutique (or just very very very good) lit firms did at least two of the following:

law review exec position

moot court

mock trial

clerkship with Article III judge

They were all on law review.

4 of the 5 "small elite" firms that I can come up with off the top of my head definitely hire summers, and usually more than one.

Susman (no quota)

Gibbs & Bruns (at least two, probably more)

Keker & Van Nest

Beck Redden

Bartlit is one that doesn't, although they do occasionally take 3Ls in the summer before their clerkships.

The whole "waste of time" thought process is ridiculous. You never know unless you try.
