Depends on what kind of STEM we are talking about. I've looked into the following:
(1) Comp Sci: Will take me probably 3-4 years, and that's just for a 2nd BS
(2) Stats: About 3 years, can do a Masters.
(3) Applied Mathematics: Sames as Stats.

lol at this plan.
How much would it cost you? Have you added up the cost?
Would you do it part time?

Comp Sci will cost me more as I have less options.
Stats/ Applied Math I can go to local State U, won't cost me much.
And yea, I'd do it Part Time.

what field exactly?
I would recommend a health related field if you are just looking for a stable job.

not to sound like a dick, but I did mediocre in stats, but really liked algebra.
however, graduate level pure math was too much for me as well.
stats can def get into some pretty deep waters too though.

you like stat?
i got some potentially good advice. go into reinsurance brokerage. the deals are huge and the money can be too. they loosely deal with stat as the actuaries come up with the real work but they need to understand it generally. look for entry level brokerage program an aon, us re, etc. they will train you. in 5 years you could be making $200k if you are good.

To late man.
STEMs work as grunts anyways. And with CS, any 3rd world monkey can code. The real challenge is finding something worth coding.
