Give them a rate for a basic will and power of attorney package that is slightly cheaper than the going rate in your town. Focus on younger yuppie families with small children.
Find a great set of forms from somewhere, get a few trust and estate lawyer friends to bounce questions off of and occasionally ask for language (when your client wants something funky in their will)
Get to know a good accountant to send clients to, and to bounce tax questions off of related to trusts and stuff |

If you're chasing middle class clients, learn the treatise, but more and more you will need to know elder law (Medicaid planning for long term care). Otherwise, your estate plan will fuck the client when the POA can't move assets for Medicaid or when one spouse dies and leaves money to the spouse who needs to get resources down for Medicaid.
