Don't have the same PC double as a NAS. Any down time will take your NAS offline, and maintenance on the NAS will also be extra work. Get a cheap ass mini pc and put Unraid on it. Make a ZFS pool and forget it. Get a used ironwolf pro as your parity drive. I did this with a 10 bay enclosure and it solved a ton of problems.
You can also just put your GPU in a server and do everything in a GUI. You can VPN in and access your GPU from anywhere.

There's like no software for it. It's crazy that it can even run Ubuntu. However, it will let you run Nvidia and AMD workstation GPUs alongside each other, no problem. Memory bandwidth/PCI lane shit is dealt with in a much less convoluted manner than with TSNIAH's rig. The next closest thing to this in terms of architecture would be a Mac Pro, and that locks you into Apple's ecosystem.
Of course the lack of native apps shouldn't be a hassle for TSINAH. This is his opportunity to be a trailblazer. Hardly anyone on earth has a developer platform like this to fux wit

Your system is gimped in every domain except VRAM speed. There's always going to be a memory controller of some kind bottlenecking the fuck out everything else. Any RAM that isn't soldered is slow as FUCK right now. Threadripper in particular is old, slow bus architecture.
Also, put the hard drives in a NAS. Don't make your gaming PC your NAS.

TSINAH here's one reason why you shouldn't be putting hard drives in a computer you intend to use to do anything else:

That's a realistic estimate of how long it takes to preclear a disk for a ZFS pool. Guess what happens if you have to reboot while that's going on. And 14tb isn't even that big by modern standards, it's actually the smallest drive in my array. I have 3x 20tb drives that each took over 20 hours to preclear, and I still have several more drives waiting in the queue.
Of course you don't need to do this if you're running RAID, but RAID is pure shit. There's no integrity checking to look for inconsistencies between mirrored drives. Instead the system waits for a SMART report that never comes. For that matter, even if an inconsistency is discovered, the RAID controller doesn't know which disk has the corrupted files. You can't just tell the RAID controller to make an educated guess.
ZFS pools solve all these problems and more, but maintenance may require the server to stay online for days at a time. Parity checks on 20tb hard drives take minimum 24 hours.

Same way a boring Lexus will be easier to deal with than a fun Mercedes AMG for ordinary tasks in the long-run, writing optimized code for stable & lower-powered, but still relatively higher-end hardware will be easier to deal with in the long-run.

TSINAH if you are actually going to connect a monitor to this thing, consider using one of these as your primary display card so the 5090 can be passed to a VM without issue.

Here what that card does for you:
1. gives you a media engine that's just as advanced as the one in the 5090, and also higher quality. NVENC is fast but the quality sucks so bad that people avoid it by default.
2. it only takes up one PCI slot, and it can be the slowest one on the board. It could be PCIe 4x or whatever, it doesn't matter
3. it doesn't require external power. It draws all its juice out of the PCIe slot like a video card from 1991.
