Merlot is softer, fruitier (plum, cherry), with lower tannins and acidity, making it more approachable; Cabernet Sauvignon is bolder, more structured, with higher tannins, higher acidity, and flavors of blackcurrant, cedar, and tobacco, known for aging well. Think Merlot for smooth, everyday drinking and Cabernet for intense, food-pairing power, though both are popular Bordeaux grapes often blended together for balance

Yeah I mean if you’re just looking for something to guzzle down like a SF homeless bum then get whatever is cheapest lol. I look at wine as an experience. I’ve flown across the country for sips of $1000 wine. For my birthday my wife had a horse and carriage take me from NYC to 30 miles outside of Baltimore to taste a Civil War era wine.

Cabernet Sauvignon is the king of grape varietals producing magisterial and age worthy wines from Bordeaux to Napa. Merlot, save exceptions like Petrus or Cheval Blanc is boring and no comparison.

What people said above is right for those two. And the third you mentioned I’m guessing is Malbec which is kinda between the two. More sour fruity taste and less tannin bite than cab. A good Malbec can be found pretty cheap and is my favorite thing to drink with steak and charcuterie, and more approachable than cab imo. I’m not a huge wine guy but bartended at a place with a good wine selection in college and Malbec was my go-to.

Yeah maybe was the other. I really don't care much for any of them but I think sauvignon is generally safest. I guess I'm wary of merlot because it can be sweet and I don't mix wine with sugar

Cabernet sauvignon is the king with food. Merlot can be good but if you're picking one blind there's a lot more bad merlot out there. If you're drinking them straight without food, I'd much rather have something else, like Pinot Noir or an acidic white, etc.
