this is true but besides the point. they've had tomatoes long enough to invent authentically italian cuisine that makes ample use of tomatoes. pizza is just not italian cuisine. it is gentrified american fast food.

long hand cut strips of dough basically. and i think they fried it wet; no boiling as we do now

“Italian food” is a fraud. A lot of the iconic dishes weren’t even popular until after WWII or even later. Carbonara is from like 1945. Cacio e Pepe not until 2000s. Bolognese sauce from 1980s. But if you talk to Italians they act like these sauces are some massive tradition from hundreds and hundreds of years.

when i think of italian food proper (not touched or mutated by the diaspora) i think of anchovies and heavy boar stews soaking in wine. pulses and rich cheeses

They totally do. It’s all over the menus everywhere in Italy now. It’s all over Italian restaurant menus in Europe and if you get a bolognese or whatever people will be like “meh not as good as in Italy”. They’ve built up a huge fraud in one generation about how it’s super traditional
