Cacio e Pepe not until 2000s. Bolognese sauce from 1980s. But if you talk to Italians they act like these sauces are some massive tradition from hundreds and hundreds of years. It’s all over Italian restaurant menus in Europe and if you get a bolognese or whatever people will be like “meh not as good as in Italy”.
