Anyone in the UFC.
MMA is an interesting phenomenon because basically what we discovered at the beginning of the UFC (which was early 90s) is that all these black belts from the orient would actually get their shit pushed in by elite BJJ practitioners or Olympic/D1 wrestlers. That wasn't the end of it, though. Wrestlers and BJJ masters had holes of their own, and sometimes BJJ masters got knocked out by boxers/kickboxers and wrestlers didn't know how to finish fights. As a result people learned to fix their weaknesses and become at least competent in everything.
Most people these days don't have any "holes" in their game relative to fighters back then, only relative to other current fighters. People used to only practice one style of martial art and were largely one-dimensional. Fighting was actually pretty stagnant for hundreds of years. That's changed, and the fight game has evolved rapidly in only 25 years simply due to exposure to so many different styles. A UFC fighter now would thrash just about anyone (at their weight) from before the 90s.
"I'm pretty sure the real Bruce Lee story includes a bunch of years that was basically UFC streetfighting with no cameras. Don't UFC fighters also use techniques that he came up with?"
No, it was just street fighting. To credit Bruce Lee, his philosophy sort of inspired MMA. His martial art "Jeet Kune Do" practiced the mantra "Take all that is useful, discard all that is not". Which is essentially what MMA is......take useful shit from any discipline.

I think if he trained properly from a young enough age he'd be elite. His athletic talent (timing, speed, strength-to-weight ratio) was off the charts.
He also had an open-mind and would be willing to learn wrestling and other shit that was necessary.
