It's not like you can't test this shit in a lab and figure out whether shit is leeching into the water. The properties of these materials are fairly well known. The real hazards are from other plastics in the environment. You are best off never touching thermal paper for example, and that includes every store receipt. Using a steel water bottle and glass storage containers to save you from plastics is like driving a Prius to end climate change. Furthermore being able to make your food this tasty might be worth the tradeoff. You might consume less seed oil, less sugar, all that shit. Vacuum kits are actually worth it separately from anything to do with sous vide because they keep your food fresh so much longer. The Henckels system is actually the most compact and easiest system if you're willing to make the up front investment. They only use glass containers for storage whereas Foodsaver uses plastic, and their handheld vacuum thingy takes up no counter space. |

The downside to having a 1200w device is that you can overload your circuit breaker much if you're using other electric appliances at the same time.
