imo most prestigious species keep their singular form in the plural: deer, sheep, moose, elk. "oxen" is the last remaining Old English plural. what's interesting is the live animal gets a German name but when butchered it becomes French (beef, venison, poultry). Latin is forever trying to subjugate German.

heard a long form explanation for the meat thing. the meat convention came from the french-speaking aristocracy period of england when the well-to-do were speaking french and eating the meat. emulated by lower classes, etc.
