We actually did have a salad not photographed. It was kale from my wife's aunt's garden with lemon and olive oil. Also a side of roasted mushrooms in a cream sauce.

Sadly it was not kosher.

The potatoes were really good man. I first boiled them, then tossed them in a garlic and rosemary infused olive oil I made. Then roasted them for like 30 min at 450 and tossed them in the garlic and rosemary I'd strained from the oil. They were crispy on the outside and creamy on the inside.

when you buy short ribs, you are looking at the number of bones when buying flanken cut (korean style). ribs 1-5 are chuck ribs with 4-5 smaller bones from the chuck plate. these are better if you like a little more meat, less fat. the meat is tougher from the chuck plate v the short plate, but still good esp flanken style since it is a quick cook.

ribs 6-8 are what you really want. ribs 6-10 are the short plate and contain 3-4 larger and wider bones and better quality meat, compared to the chuck plate - you will get nice marbling meat v fat ratio - but avoid ribs 9 and 10. this is where rib no. 7 in ktown mfh gets its name, supposedly using rib 7 exclusively, which contains 3 bones. if you havent been to rib no. 7, i highly recommend.

count the bones first. look for packs that have more 3-4 bones. rib 9 and 10 are extremely fatty. you will know them on sight compared to ribs 6-8. from your pic, ignoring that weird thing at the very top, the first cut has 3 wide bones. that is what you are looking for, from the short plate ribs 6-8 most likely, hard to tell since i cant see the entire cut. the next one immediately below that has 4 bones, that is from the chuck plate, ribs 1-5.
