cuz they leave it to your brain to "fill in" the realism

when graphics aren't close to photo-realistic, they end up looking "more real" to your brain because it can automatically adjust your perception of the game environment to match what it "wants" to see. everything "works" because your brain makes it work and fills in all the blanks

the better graphics get and the closer they look to photo-realism, the less immersive the game becomes, because your brain can longer do this. the graphics are "just good enough" to prevent your brain from performing this kind of suspension of disbelief. you're forced to see the game for exactly what it is: a fake environment that isn't real at all

A good example of this here. Limiting render distance not only worked within technical limitations of the time, but also enabled the effect I described above, where the players brain perceives what is unseen as “natural” and the “blanks” are filled in subconsciously

Many older games used techniques like this

Yup. Near-photo realism has been an absolute fucking disaster. Graphics have gotten objectively much much worse despite technical capabilities becoming enormously more powerful
