Wtf, I own a JGC and even I'm not immediately rushing to say JGC > Toyota Highlander. The first question I would ask is how much you care about a 3rd row seat. If you plan on having more kids then you might want a legit people hauler with that 3rd row. The Highlander will be more reliable, and Toyota service is better than Jeep service.
The Jeep can be faster (with the Hemi, but at the expense of decent fuel economy), better off the pavement (which, like 2% of people ever actually do), and more luxurious (if you spend close to $60k for the Overland or Summit trims). Just depends on what you want it for.

my parents have a 2013 JGC and it's an amazing car. i just don't know how much i trust american cars right now tho.

Honestly, it is an inspiring car. With the hemi it is fast as fuck - you'll get from 0-60 in under 7 seconds and it performs really well at 100mph+. The air suspension causes it to go lower to the ground at very high speeds, so it doesn't feel like a top heavy truck. It has a sports setting so the transmission feels much sportier when you feel like that. And when it snows you can raise the air suspension, set it to snow mode and it feels like a tank. When there was flooding I took it through a few feet of standing water and it was nbd. Inside it is all leather including a leather stitched dash and it has every tech toy like adaptive cruise control, sensors all around, great sound system, etc. Basically, the car itself is exceptionally high end and competes well with Land Rover and Mercedes Benz. The dealer service, however, does not.

I used it in deep snow last year and had to switch into 4 Low. Helped immensely. Yes, I only have OEM tires on 20" rims but it got through some truly awful stuff. No, I'm not going rock climbing in it, but there were times when the only thing I would tolerate instead would be something like a Land Rover or an M Class (which is just a variation of the JGC).
Just noting that Jeep has some legit luxury features that are very nice to have. Changes the feel of the car dramatically.
I agree that ultimately they're very different vehicles. Also, they're realistically in a different price point. The higher trim Jeeps are in the $50-60k range, which is a good $15k+ more than the highest trim Explorers.
