I have a decent 5.1 setup at home that fits my needs but I don't get to fully utilize it very often because of the wife and kid. Thinking about exploring hi-fi headphones to be able to listen at the volume and quality I want more. Right now I mostly just listen with my Apple EarPods if I'm exercising. I also have a pair of Klipsch Image S4i that are decent but from from great.
What's a reasonable price point to get a great pair of headphones, and what do you get at the different price point (e.g., $300 vs $1300) Does an iphone or iPod do great headphones justice or do you need to listen from a better source to really notice the difference? Will I need to get a DAC if listening from a laptop?

I have a pair of Beyerdynamic DT770 32 ohm headphones that I really like. I paid around $170 but they are currently $250 on Amazon. These do not need an amp and work fine with an iPhone. Most headphones >$200 will require an amp.
What works best for you depends on a lot of factors. Do you want open back, closed back, or IEM (in-ear)? Are you listening to stuff on your phone on the go, or are you just going to use them at home?
Check out Head-Fi. It's definitely the best resource. They have a buying guide here: http://www.head-fi.org/a/head-fi-buying-guide-introduction

Get started by checking out some of these headphones. They're the classics that have been widely praised over the years.
Grado SR60i. They make music lively. Great for rock and jazz. Uncomfortable to wear for a long time. The highs can sometimes pierce your ears. $80.
I have the Sennheiser HD650. They make music sound unbelievably gorgeous, but not necessarily exciting. $350 street price.
AKG K702. Accurate but rather sterile sound. $250 street price.
Beyerdynamic DT880. These do a lot of things really well, and they're comfortable to wear. $250 street price.
I haven't heard but am intrigued by Philips Fidelio X2. They're supposedly incredible for the price. $300.

Interest in headphones has exploded in the past ten years, and there's an unfortunately large number of headphones that cost upwards of $2000. I think it's a combination of cynical manufacturers capitalizing on the trend, as well as a genuine pushing of the envelope. For me, though, that price point is unacceptable, as you can buy a pair of kickass speakers with that kind of money, especially if you buy used.
I have the Sennheiser HD650. When I'm in the mood to do nothing else but listen to music, these are my go to headphones. They envelope music in a very sultry, liquid tone that's hard to tear myself away from.
I also have a pair of the Sony MDR V6s. I think I paid about $50 for them on sale. They're a good value and have a lot of pluses. They're durable, and they're relatively neutral. I can see why studio people and DJs like them. I like them for watching movies. But I find music much less enjoyable on these than the HD650s.
I think that after $350 or so, the returns are far more diminished. Even at that price, manufacturers are raking in crazy profits.

Bought these recently in Japan after spending nearly an entire day trying everything from 200 to 2000 bucks.
I preferred to spend less rather than more. I settled on these and am very happy with them.
