There is no need to buy an actual griddle. Griddles are a scam. Instead, just get a sheet of 3/8 inch steel cut for you at a local fabrication shop; usually a recycling center will do it even cheaper.
Then, you put it on top of your stove ranges whenever you need to use it!

Good question. In most states stainless steel is required for cooking surfaces, but some states do not require it.
Personally, i have an actual griddle, but it came with my truck. The advice above is for people who have a bare truck and are in the process of outfitting it.
Of course, you could also get a stainless sheet cut out, but that will cost about 4-6 times as much money.

That is one of the most brilliant ideas I have ever heard (not joking).
I am a pretty tough guy, so security would be no problem.
However, the permitting process would be lengthy, and the protests might be done by the time I get the permits.
Of course most inspectors will not come to those protests. Again, brilliant idea.
