The tower will be approximately 25 feet tall when completed.

? nah man I mean...just get a flat grill, get some pitas, about 4 or 5 types of meat, cheese, some produce, some sauces/toppings....a reasonable but not absurd number of options......throw the meat on the grill and chop it up with some peppers/onions or whatever, put it on a pita with the other stuff. doesn't take long to cook at all and you can prep the produce ahead of time.

I used to be a "sandwich artist" when I was 19-20 and we'd have thinly sliced pieces of beef that we'd throw on the grill and chop up and a philly cheesesteak would take about 3 minutes.

I don't know anything about the Sturgis Rally other than it's a motorcycle festival of some sort.

But I'd imagine focusing on food that people can carry around and is cheap.

Buckets of fries, corndogs on a stick, chili/cheese dogs and fries, maybe chicken fingers, popcorn, shit like that. Carnival food, essentially. But I also have to assume there will be a lot of places like that.

Edit: Thinking of carnival food, I just imagined a food truck called "Carne-val" that is painted like a carnival tent, serves meat along with some carnival sides like cotton candy and pizza fritas, and has a spinning wheel attached to it for some kind of game or giveaways.

Mozzarella sticks are like 6 dollars per pound. Chicken tenders are 7.

It seems kinda hard to make a real profit on that.

The fries covered in chili and cheese is profitable because the fries are like 25 cents per pound, and chili is 2 dollars per pound.

Hey man - first thanks for posting, always enjoyable to read about interesting work like food trucks or like that guy who went from law school to working in an oilfield. That's my favorite part about this board, so please keep posting and keep us updated.

Second, be cautious about some of the advice here. For something like this, do not overextend yourself and create too large of a menu. If you are in an area without much foot traffic, like it sounds like your typical gig, then you need to appeal to 50%+ of people and have at least one thing that most people will like. On the flip side, because there is less competition from other vendors, the quality/differentiation of the food doesn't need to be as high.

For a huge event like this, you only need to appeal to 1% of the people because foot traffic will be so high. On the flip side, you will be facing a lot of competition from other vendors, so just a generic food lineup won't cut it.

My advice would be to pick a very small menu, even just one thing like mozzarella sticks, then just focus all of your efforts on that, getting the highest quality as fast as possible. As customers come and go, you want their friends to be asking "hey where did you get that" and for them to say "that mozzarella sticks guy" and for that to be a meaningful statement.

One common sales tactic is to have small samples of your main product that you can pitch to people. It doesn't always work of course, but studies have found that it's a good way of baiting people into buying the product - first because they feel compelled to reciprocate after you've done something nice for them and secondly they may actually really like the sample. It's also a good way of engaging people if business is slow.

Good advice. I expect that doing burgers will be fucking difficult... having to flip them, drunk people upset that it's taking too long, etc.

Also, thank you for showing so much concern for a stranger.

Right now I am looking most seriously at the chili and fries. One guy next to me is doing brisket, the other is doing sweet corn. I don't know whether that is the extent of their menu, or if they will have sides/variations of those things.

Fries/chili sounds like it has some promise based on the #s you ran above based on cost, time to make, etc.

Honestly it's hard for me to assess to chocolate fondue tower, maybe some other posters can chime in who have more experience in the food industry or at events like this. Seems like a business decision to carefully weigh.

In such a crowded event like this, differentiation is probably a good strategy IMO, so the fondue tower is likely to stand out and really help you appeal to the small but passionate % of people who want that. Remember, the more differentiated the product, theoretically the larger premium can you charge because people are going to be less likely to price shop on you.

However, sure about the costs, how long it takes, etc. To echo a poster above, if you are the only one running the show here, it's very tough to handle the register, answer questions, prep food, etc. Deep frying, then covering stuff in waffle batter, then chocolate, while keeping it all clean and fast seems like a huge challenge.

The chocolate will be available for the customers to dispense on their own.

The battering/freezing of the fruit will be done at night.

Still, it seems like a lot of fucking work- and the other thing is, I don't know if I risk diversifying too much; I think you are on to something about just doing one product really well- it's a branding issue.

The other possibility is, since I've got a 20x20 foot space, that I can separate the apparatus for each model (chili/fries vs. fruit) so it appears like 2 businesses.

Got it. If you can do significant prep, then the chocolate fondue thing becomes more interesting. Just one thing to manage is how the customers use the chocolate tower - if they are unsanitary with it, etc. it could be a big headache for you.

I don't have enough expertise to offer much more of value so I'll stop with this post but IMO your head is in the right place.

I like you thinking about branding - you'll have to stand out from dozens or even 100+ other vendors. You don't have a huge scale thing going for you where you can just compete on high volume / low prices so branding and product differentiation is key. Plus, brand will help when people carry around their food - it's free advertising to the 100s of other people who see them eating that food.

In a video I saw lines outside a guy who was doing "Donut Burgers."

Notorious- what do you think about the churros? A lot of people have a strong attachment to these from Disney World vacations as children. That's why I'm into that.

My friend is lending me a motorcycle without an engine inside.

I'm mounting this on my PVC Tower, and putting a zombie (or nude mannequin) on the bike.

There is going to be a sink in front of the bike.
