Looks like the railroad is about to give me a seriously sweet offer (starting out at around 30/hr, amazing benefits) for diesel mechanic work.

I have no fucking idea if I should leave the food truck and take the offer.

Does the truck have long term potential? Does the job have long term potential? Lots of RR guys are getting furloughed right now.

you will never make a lot of money from the food truck. successful trucks in big metro areas make around $70K net. if they'll pay you $30 / hr. plus benefits, that's more than what you would make if your truck was really successful. you would get in with the union and get seniority raises too. take the job.

Health permit- 100 bucks or so

state llc- 100 or so

It's really not much, i guess. You can even fill your own propane tanks super cheap. Truck has a generator but you'll prefer a real hookup.
