Don't go to the place that seems desperate to bring you in and tried to move up your hire date.
I was at a mega-firm so crushed with work that we'd beg qualified midlevel and senior laterals to join and start asap. Then they'd just get immediately crushed. I always felt so bad.

Finding a mentor is the ultimate goal and finding people you like working with is the biggest difference-maker. Beyond that, if you get a few bites you can totally negotiate a signing or end of year bonus--but no need to get greedy, you need an offer first.
Oh--and even though the new firm will insist that you need to start ASAP, you need to firmly tell them you had a preexisting vacation or wedding or something that week, and then book a 2 week trip.
