Stress Tests during Banking Interviews (Maybe Law).....is this shit true?

That is called the stress test interview, not all that uncommon in the banking/investment world. It's when you've made it to the final few rounds and they want to see how you react to someone who blatantly rips into you and how you perform under a lot of stress/pressure, which is part of the job. I know because I've had several.
I had one stress test interview that started off with, "Why the fuck do you want to work here?" It can be scary sometimes..."

Each interviewer came in and was like, I have to leave in 30 mins, anoter in 45, etc. They didn't sit on the same side of the long table either. It may have been "ohh so random" but it did cause me to change my thought process.
