I make sure the cheese is made with vegetarian rennet (i.e. not dead calf stomach). Most Euro cheeses--including Mozzarella di Bufala and Parmigiano Reggiano--are out.

By limiting dairy I just mean I avoid it somewhat - e.g., I don't put a slice on veggie burgers at home, I make vegan bleu cheese to go with cauliflower wings, I don't make cream soups or add sour cream to baked potatoes, I don't sit down to a bowl of yogurt, etc.

Eggs I find to be repulsive so they're easy for me to avoid (at least on their own).
