you're wrong about what drives bitcoin's value. mass adoption as a currency will never happen. in fact, in the run up over the past 3-4 years, there's been almost no increase in bitcoin's adoption by merchants.

bitcoin's value is largely increasing because of a) growing adoption of crypto as a means of speculation and b) liquidity network effects that increase its utility as a means of evading regulation/breaking the law. i think the addressable markets for both use cases is still largely untapped.

however, you're right that it's unlikely generate insane 100x, 1000x returns. 10x is plausible from here over 5ish years, with maybe a bubble or two taking it up briefly higher.

even though transactions are recorded, there are many ways to cover your tracks. most common is to move it to a shady exchange and trade it for another crypto (say, monero or zcash). there are also coin mixers that do a good job obfuscating ownership.
