Non-lawyer, making $100k in ARE COUNTRY. Own home with a $800/month mortgage. Have all the basics covered: cash emergency fund for 6 months, max IRA and 401(k) every year but still have money left over to invest.
Do I just shove it all into VTSAX in a non tax advantaged account and let do?

As I feared, you are doing old economy Steve shit. There aren't many industries where your employer isn't half-fucked atm and looking to cut people who do 3 hours of work per week.
Also, in general, in 2020, financially stable companies are woke, struggling co's can't afford to be. The former will make several Women/URMs your bosses, the latter want to cut/fire you if at all possible. This is why Nerds switch jobs constantly and get immense salary bumps.
Sure the "software" Engineering field is crowded but you're an Engineer, many of these boot camp fags are liberal artists. The second an employer sees liberal arts on a resume they trash it for ANY job. You just have to ace the interview by proving your Nerd cred. Every field of endeavour is "crowded" but thanks to the Clique System, you mainly need to prove your worthiness from a Clique perspective. Doesn't matter one iota if millions of Losers fancy themselves Engineers, since every single one of them exists to Lose. Your an Engineer.

1) Don't spend money on dumb GC shit like Starbucks, 65 inch TVs, cars, etc.
2) Increase your income
Do you have family? If yes, keep doing what your're doing.
If no, you have enough money to invest in real estate.

bottom line is that u need to make more money
u won't get to where u want (financial independence) making 100K without making massive tradeoffs in lifestyle that u probably don't want to make
find a side project that u are good at doing (the landscaping company idea is good). start small with just a minor investment, and keep plugging away until u're able to scale up. just being responsive to customers already puts you ahead of 90% of the competition.
