California has almost twice as much population so they're going to win this by default. If you mean per capita no idea.

Probably CA because it's so much bigger and because only the Miami / Boca / PB areas of florida have a lot of NY transplants.

"New York style" probably has a negative connotation in California, which has more of its own culinary and cultural sensibilities and sees itself as a rival to New York and the east coast.
Calling something "New York" wouldn't be a selling point there. Florida being east coast is still in the extended orbit of NYC, and NYC has more prestige there.
