its not necessarily bad, but knowing where something comes from and its purest forms helps to understand and appreciate the derivative more, or sometimes less. take the fusion of mexican and asian that is increasingly popular in california, is this a new cuisine? or is it just some bastard local hapa child? what exactly is a burrito filled with bulgogi, or using american barbecue in nigiri? at what point does something become bigger and novel?
without a doubt, new world vegetables and spices, especially the magic 8, transformed european cuisines. european food changed dramatically post columbus. this by far is the greatest contribution from pre columbian american cultures on food, not just in europe but cuisines around the world.
but "mexican" food on its own is a dead end. it is not going to be elevated or grow into something better like french or asian food post columbus after the introduction of new world vegetables and spices. take the cacao bean, one of the magic eight. it had been in the americas forever, but it only became coffee after its arrival in europe. truly great cuisines grow and become better. mexican food is the same as it has ever been.
as tommy alluded down thread, there is no demand for "mexican" food in the world, so that should tell you something even as the world is becoming seemingly smaller and flatter, where you can get almost any food or ingredient anywhere in the world. you could make an argument for tex-mex (which is what i really think americans enjoy and what you think of as mexican food), but most mexicans look at tex-mex with disdain as some american red headed step child. but mexican food as a cuisine is not going anywhere. if thanos killed all the mexicans in the world with a snap of his fingers, only tex mex would remain. nobody else would give a shit about mexican food.

the transformation you mention of european cuisines with new world spices just happened in reverse in mexico. they used european techniques and ingredients in conjunction with the local ingredients and knowledge to create something truly different. if that's not elevation what is? i think you're trying to make a distinction but i don't think it's a good one. it's simply not true to say that mexican cuisine is the same as it has ever been.
tex-mex is great but i love authentic mexican food as well. there is great variety in authentic mexican cuisine--from seafood in ensanada to poultry to red meat, they have it all, and it is all complemented with some truly unique flavors from the chiles and salsas that are not as commonly used elsewhere.

Mexican gets a knock for mediocre desserts. As a fatass sugar addict, it’s interesting to me that white countries like Germany generally have bland food, but some of the best desserts in the world (which is why I give #1 to France: contender for entrees and sides, but #1 for desserts by a landslide). Italy is outstanding but mediocre desserts, Asia in general is dogshit for desserts despite having better food than Europe overall. India and the Middle East are both contenders for high tier mains and desserts.
All that said, most Mexican food is some variation on corn tortillas and a meat/cheese/veggie filling, which combined with some sort of sauce/salsa is a perfect everyday staple. Mediterranean staples are healthier and probably best tasting when normalized for nutrition, but for pure taste Mexican food is hard to beat as a staple.

I think you're being a little harsh on the desserts. Tres leches, flan, and churros are a respectable trio. What are your favorite Indian or Middle Eastern desserts that you would say are definitively better than those three besides baklava? Knafeh, gulab jamun, the various overly sweet Indian desserts, I wouldn't say any of those are a tier above.
As far as desserts go I think the French really define the category. Even Asian desserts borrow heavily from the French.
Mexico suffers from a lack of good bread. I think that's the biggest problem area.

The best pork production is from Germany, Japan, and US, with high honors for Korea and China for preparation (but not cultivation).
The best lamb is from New Zealand or Australia (in terms of cultivation), shouts to Greece/Turkey and possibly Lebanon for preparation. I had a Cretian lamb neck this year that was one of the best flavored lamb dishes I've had in years.
If you want horse, you're eating French or Swiss, where it is actually quite good.
America (and Canada) produce the tops of everything else, including venison, buffalo, rabbit, elk, quail, pheasant, etc.
Mexico is the best at producing...crickets? And Lebanon produces jack shit on the global stage, but I guess they grind up meat from other countries and turn it into kebabs, so, uh kudos to them for that.

And I don't get you Stanning Thai food, which is a good, cheap, spicy eat with some meaningful regional variety (maybe 4 regions), but which consists almost exclusively of tiny pieces of protein with large amounts of starch and lacks the breadth/nuance/delicacy/attention to ingredient quality/variety of Japanese food or the texture/depth/regional variation of Chinese food. Thai is good, but IMO the Asian food hierarchy is Japanese >> Chinese > Thai = Korean > Malaysian = Vietnamese.
