I took the racks and halved them and will smoke them standing up on the Weber Kettle. There should be plenty of room with this configuration.

Rub is homemade this time—salt, pepper, paprika, onion powder, garlic powder, and of course, brown sugar. I also made a brown sugar simple syrup mixed with apple cider vinegar that I will use to keep these baby back moist with throughout the cook.

I will help you with your ribs. First, get some apple wood chips or chunks and add some to your coals to generate good smoke.
Your rib rub is good, but I like to add some celery salt, too. I also use maple sugar rather than brown sugar--you can buy it online or make it yourself by heating up maple syrup and boiling out the remaining water while stirring constantly. Eventually, it just turns to sugar--it happens instantaneously and is pretty cool.
My cook method is 3 hours on smoke, 2 hours wrapped in foil (with butter, maple sugar, and a heavy spritz of equal parts apple cider vinegar & apple cider added. I use that same spray during the initial 3 hour cook, too, roughly every 30 min), and finally 1 hour on the grill. During the last 30 min, I coat it with my sauce (always homemade).
I stopped going by temp and now just look for a particular feel for the ribs at the end of cooking. The meat should be tender, but not overcooked and super "fall of the bone"-ey. You want to be able to take a single bite from the center of the rib without all of the meat just falling off.
