There's all sorts of gaps in the historical record, this is one of them. Recordkeeping was good in that era, but lots of soldiers just went straight up "missing"-- they obviously went somewhere and of those some subset just started over in the glorious worker's paradise, notwithstanding the material discomfort that might entail.
Now, compare that with the alternative of being on a submarine. It's a submarine, you're stuck, the alternative is the ocean. Better to join the worker's paradise. |

Eastern front has at least some opportunities to not be a total disaster. Injured and sent back home. Stationed in Finland. Run off to Sweden. During retreat, ditch your unit/uniform in Czechoslovakia and hang out there until the end of the war. |

Also, risk of death is vastly overestimated for the Eastern front. From wikipedia numbers, 28M Germans were deployed to the Eastern Front, about 5.1M died - that's about 18% death rate. 4.5M were captured you're still only at about a third (and I would rather be captive than dead). A U-boat assignment was basically a death sentence.
Also, the Eastern Front was huge, with serious fighting only taking place in a few places. Yes, if you were deployed to Stalingrad or Leningrad it would be brutal, but there were plenty of other battles and deployments that were less than intense. |
