Prep

get 2-3 romaine hearts and tear into pieces with hands; wash very well even if prewashed b/c i don't trust immigrants to not foul the stuff they pick. i typically wash 3 times and then soak in salt bath with ice cubes. rinse. spin in salad spinner, lay on paper towels, then back in ziploc in fridge. this can be done hours or night before.

croutons: take a couple baguettes and tear into large pieces with hands, olive oil, salt, pepper, pinch of italian seasoning and into oven until crusty but still with a little give in the middle not too hard. can also be done prior which i usually do in the afternoon if we are eating that night.

dressing: I use a Molcajete to make mine in, but a good mortar/pestle, wooden bowl with pestle is fine. you could also use a bullet blender also. I like the process of the hand method. You take 2 of the most expensive anchovies that you can find (very important; try specialty market like world market if they don't have them at grocery. most regular brands are shit and too fishy). 2 to 3 cloves of garlic depending on size, and then you pound and stir that into a paste. 2 egg yokes, I like to flash boil mine for about a minute then break the eggs and get the yokes. you use your whisk now and fold that in. squeeze in half a lemon of fresh juice and a good heaping teaspoon of Malle or good quality Dijon. whisk. start folding in you oil like you are making Bearnaisese sauce, a little bit at a time and whisk hard until you have folded in 1/2 to 2/3 cup. taste. put a little salt and pepper and now about 2 heaping tablespoons of like Kraft parm. taste and add 2 to 3 drops of Worchester sauce.

fold the dressing, romaine, croutons together in a big salad bowl and then top with some hi quality parm shavings.

put those kids to sleep and smash that pussy.
