Date: November 15th, 2022 6:19 PM Author: Mauve exhilarant space tank Currently working on the menu. This is a rough draft right now. Pricing also will be adjusted slightly (but not much) once we are getting closer to opening.
Let me know if you think anything should be removed or added. I'll also put up the drink menu next week. I got some XO inspired drink names coming down the pipeline too.
The plans are all done and everything was submitted to building and safety and the health department last week. Still shooting for a Feb open but realistically probably March or April because the city is slow and we are about to get into the holidays. We already wired the cameras and speakers for the restaurant, built out the glass wall and door in the front, leveled the floors to prep for concrete floors, finished up the kitchen, and started the bathroom renos.
We also bought a sprinter van that we are going to use to bring in influencers, porn stars, celebs, and other people to the restaurant. My buddy Matt, who is my partner, is going to then rent out the sprinter van every week when we aren't using it. Should generate some nice side income.
We have several dozen influencers already lined up for the week we open (mostly clients of mine or my body shop friend). Several of them have 1 million+ in followers (including some VERY well known adult stars).

- Get rid of bunch of filler items like the tomahawk steak, earth wagyu, bunch of salads (think about getting rid of the entire salad menu), etc. Keep only the best ones and market them as your restaurant's signatures. |

Where are you sourcing your rice? In addition to where you get it - Some purists prefer that you use older rice for sushi.
If you can source it - I’d also try and get anago, I find it to be a superior alternative to unagi, and many people appreciate the novelty. Unagi is quite good though so I wouldn’t displace it from the menu and probably serve anago nigiri only.
Maybe also try to do a seasonal soft shelled crab roll.

The menu itself needs some work. If you're trying to be a hip sushi bar, you need to add some crab fried rice w/bonito flakes, maybe some pot stickers, ginger salad with an awesome "house" ginger dressing, etc. The menu also needs to rotate seasonally.
Definitely keep the A5, but also offer A3. If you're looking for a good gimmick that will entertain proles, serve it raw with a hot rock & have customers cook it themselves on the rock. I've seen this work masterfully at a high-end Orlando sushi joint (Kabooki, I know the owner and can put you in touch with him of you want. It's the most successful sushi restaurant in Orlando with a couple locations).
Also, where are you sourcing your king crab from? Alaskan king crab is seasonal & usually frozen.
Also, talk to kenny, whose friend in DC has a bar with an *insane* Japanese whisky collection. Seriously, some of the bottles are even out of your price range. I've never seen a better Japanese whisky collection in my life. |

I assume this place is in the valley and you are looking for LA-adjacent trash who drive BMWs but have huge CC debt to come in and splash some cash, but please correct me if I’m wrong.
It’s not 2006 anymore. Even among such a TTT crowd, I think that when most people see so much truffle shit on a Japanese menu, it screams obvious scam. The same is true for the edible gold leaf and caviar shit, and slightly less (but still to some extent) for A5 wagyu. I wouldn’t be caught dead eating in a restaurant that served this much truffle/gold shit, as it is probably full of fat, sassy “government worker” ladies celebrating “they birthday” over apple-tinis while yelling at their waiter, plus maybe the odd flat brimmed hat wanna be “Ben Baller” AZN thug. Nearly every restaurant I’ve seen try this shit has tanked within a year unless you are talking about Nusr Et, and that was only propelled by “Salt Bae’s” instagram following. If you are going to offer caviar, truffle, and wagyu—and if your clientele is not 100% gold chain wearing Persians—you should limit those ingredients to like 3-4 items totally on the menu and make sure they aren’t on the same page. Bondi sushi in NYC offers these ingredients in a non-douchebag way and is doing great/opening multiple locations. I also think it is basically impossible to serve lunch and be a sexy upscale dinner destination. The reality is that people going out for a dinner date want a darker space with more high end decor that often looks TTT during the day. So the black-and-gold prole baller look doesn’t really translate to lunch. I would lean more towards what Blue Ribbon sushi has done in NYC or what Sugarfish has done in LA: natural wood colors with maybe some dark painted metal accents, but not super dark to turn off daytime customers, and not so dependent on a bar that people will be turned off from going there during daytime. (Or just nix lunch—which is hard to staff with service employees these days anyway—and go whole hog on dinner/bar service.)
Also ignore the dorks who think you need all kinds of exotic shit on the menu to impress Japanophile sushi dweebs. Nobody who actually gives a fuck about authenticity is going to some Jewish-owned restaurant in the valley when there are many serious Japanese sushi places in LA. I think your goal is probably to provide a nice night out that is slightly less expensive and much more convenient that having to go into LA proper, with food that would be comparable in quality to a “place to be seen” restaurant—not a Michelin starred place or a James Beard nominee place. |

I would also eliminate the second page entirely, move the "New Sashimi" to 1st page and called out as Chef's Specials or whatever, then have a separate simple menu for sushi/handrolls. People who want sushi/handrolls generally don't want any of the other stuff and it's unappealing for them to dig through the entrees etc. Then you still maintain the veneer of being a sushi bar at lunch. |
